I'll be experimenting with modern and ancient brewing techniques and using some ingredients from the wild, some from brewing shops and some from supermarkets.
Christmas Ale
Well it's November so that means it's time to get a Christmas beer brewing. Here's my recipe for a tasty spiced Christmas treat.
4.5 kg Crushed Pale Malt
285 g Crushed Crystal Malt
250 g Chocolate Malt
100 g Flaked Barley
15 g Golding Hops (10g bittering, 5g aroma)
30 g Northern Brewer Hops (20g bittering, 10g aroma)
2 Cinnamon sticks (2-3g)
6 Whole cloves
1.5 tsp Ground Nutmeg
2 Satsuma Oranges (quartered with peel still on)
1 pkt English Ale Yeast
1 tsp Irish Moss
Make the beer as you normally would, check my All Grain Brewing post if you haven't made all grain before. Add the cinnamon, cloves, nutmeg, and oranges at the point when you add the aroma hops.
This makes a dark hearty spiced ale, just right for those winter nights!
